Servings: 3, 2.5 slices each
2 to 3 eggs
2 teaspoons vanilla
non-stick spray or vegetable oil
3/4 cup low fat milk
1 teaspoon cinnamon
6 to 8 slices of bread
Preheat the oven to 450F.
Combine eggs, milk, vanilla and cinnamon in a bowl.
Spray or oil a cookie sheet or baking pan.
Dip bread in egg mixture, lightly coating each side.
Place bread on the well-oiled baking sheet, and bake on each side about 6 minutes until well browned. Lightly spray sheet before the bread is turned over to brown on the other side.
Top with favorite toppings.
